Okra Curry ( Bhindi Masala)
Preparation time: 10 minutes Cooking time: 30 minutes Makes ~4 to 6 people.
INGREDIENTS:

- OKRA 500 gms
- 1 teaspoon chopped ginger and garlic.
- Tomato optional.
- 1/2 teaspoon coriander powder (dhania)
- 1/2 teaspoon turmeric powder (haldi)
- 1/2 teaspoon red chili powder
- 1 tbs GARAM MASALA
- 1 tbs MIX VEG MASALA
- 5 tablespoon oil
- 1/4 teaspoon cumin seed (jeera) & black mustered seeds and carwey seeds
- Pinch of asafetida (hing)
- 1/2 teaspoon salt, or to taste
- Solid spices like black pepper, cardamom , cloves, bay leaf and cinnamon optional.
Preparation
Heat the oil and check it with cumin seeds , if it crackles its ready to start cooking. Add cumin seeds, mustard seeds optional and carwey seeds.
Add solid garam masala optionally. Once aroma comes put cut okra in oil. Cook them bit if you like tomato add chopped tomatoes. and add turmeric and salt. Once start loosing water add chilly and coriander, Garam masala and mix veg masala.
Cook them till oil starts to get separate.
Serve hot with poori or chapatti.
