Malai Kofta ( White Gravy)

Preparation time: 10 minutes Cooking time: 30 minutes Makes ~4 to 6 people.

  • Malai Kofta  is a very festive main dish that is creamy and rich in flavor. It is usually a special occasion dish. Malai Kofta can be served with any Indian bread, such as naan or with rice.

INGREDIENTS:  

For Kofta:   Boiled potato,150  gms paneer, 1/2 tsp black pepper, 1/2tsp cardamom powder,1/2tsp salt, 3 tsp corn flour, Dry fruits and resins for filling. Oil to fry

 

Method : Mash boiled Potato and paneer and make a soft dough. Put black pepper, cardamom and salt. than make bolls of dough. Fill dry Nuts and resins. Roll bolls in corn flour and deep fry till they get light brown. Put in paper napkin to soak extra oil.

INGREDIENTS: For White Gravy

  • 25 cashew nuts, 20 Resins ( Soaked  in hot water for 20 min.)
  • 6 tablespoons butter/ Ghee or oil
  • ½ cup of milk
  • 3 tsp cream
  • Solid Garam masala (bay leaf, cinnemon, cardamom and clove etc.)
  • 1/2 tablespoon coriander powder (dhania)
  • 1/2 teaspoon sugar (optional)
  • 1/2 teaspoon salt, adjust to taste
  • ½ teaspoon COOKING MASALA GARAM MASALA
  • 1 teaspoon COOKING MASALA PANEER MASALA
  • 1 tbs fenugreek leaf
  • 2 tablespoons
  • Cashew nut paste– Soak 20  cashew nuts and 20 resins  in hot water for 20 minutes and grind it to a paste chopped cilantro (hara Dhania)

Preparation

     Heat 6 tbsp butter, check heat with cumin seeds, add Solid Garam masala, when it splutters, Then add cashew nut paste with little water and saute nicely for a few minutes till the raw smell goes. Then add milk and all the spice powder Salt, coriander powder, Gaeram Massala and paneer masala  and sugar later Add cream.Cook until it starts leaving oil. Add 1/2 cup of water,  kasuri methi ( fenugreek) . Simmer and cook for a few minutes. Add paneer coftas and cook extra 5 min and garnish with cream and coriander leaves
